The Best Summer Salad Recipe

Summer is almost here and we can already smell the barbeques being fired up! Here is our favourite Summer salad recipe, a delicious fresh Peach and Prosciutto Salad.

Grilled Peach and Prosciutto Salad

Salad

• 1 small bag of rocket leaves
• 1 small bag of baby spinach leaves
• 1/2 cup mint leaves
• 6-7 peaches (Sliced)
• 12 slices of torn prosciutto
• 210g fresh mozzarella (sliced)
• 1 tbs pistachios, toasted and chopped

Pesto

• 1 cup baby spinach leaves 
• 1/2 cup mint leaves
• 1 garlic clove, crushed
• 1/2 cup olive oil
• 1/4 cup toasted pistachios
• 1/4 cup grated parmesan

Step One: Grill peaches on the BBQ for a few minutes each side until grill marks appear. Combine rocket leaves, baby spinach leaves and mint and arrange on your serving platter.

Step Two: Arrange slices of peaches with a slice of mozerella and prosciutto in between each layer.

Step Three: Prepare the pesto. Place all ingredients in a food processor and pulse until it becomes a crunchy paste.

Step Four: Top the salad with dollops of pesto and chopped pistachios.
